Dehumidification for
Meat industry, food industry & cold storage

The storage of foodstuffs such as meat, dairy products or frozen goods requires a specific ratio between room temperature and humidity. To ensure this, the use of dehumidifiers and dryers is recommended for flawless production processes. The high-quality appliances from K.I.R.S.C.H. support you with dehumidification for the meat industry, food industry & cold storage!

Dehumidification: Meat industry

The strictest hygiene requirements apply to the handling of meat and sausage products. This is the only way to guarantee the quality of the products. Meat processing takes place in refrigerated rooms. Condensation often forms there, causing moisture to condense on both the ceiling and the cold surfaces. Condensation dripping from the ceiling impairs hygiene. Soaked cartons due to the high room humidity are just as serious a problem as the health risks for employees. It takes considerably longer for floors to dry after cleaning in rooms that are not dehumidified, which can lead to work and production interruptions.

How does the condensation problem come about?

Condensation occurs on cold surfaces when the dew point of the air is higher than the temperature on the surface. The room air cools down as soon as it comes into contact with the cold ceiling, for example.

This causes the water vapor to condense into water. If this drips onto unpackaged goods, for example, the risk of bacteria multiplying increases. Dehumidification - the solution for the optimum climate! Dehumidification regulates the relative humidity and allows the right room climate to be created.

Advantages of dehumidification in meat production

No condensation on the ceiling

Significant containment of hygiene risks at relative humidity below 65-70 % RH

Faster drying after cleaning = shorter downtimes

More pleasant working conditions (no risk of slipping, no unhealthy air)

Overcoming the condensation problem also reduces the need for cleaning, e.g. in cold rooms

Advantages of dehumidification in various areas of the food industry

Dehumidification ensures: Effective drying times - Consistently high product quality - Constant production conditions

Cheese

Humidity has a major influence on the maturing process of cheese. In order to achieve the highest quality, humidity and temperature must not exceed certain values.

Fish

If the top layer of the fish is dried before smoking begins, this prevents further moisture loss during the smoking process.

Coating

When coating confectionery, it is necessary to monitor the humidity, as high humidity reduces the quality and the products stick together easily.

Dry products

When producing dry products such as soups and broths, it is necessary to dehumidify the production rooms. The right production climate ensures that the ingredients do not stick together during mixing or in the packaging. This ensures constant productivity all year round.

Bread

In the production of long-life baked goods, controlled humidity is required during several stages. Dry air can be supplied both during the fermentation phase and during the final drying process. The quality of the finished products is maintained by controlling the humidity in packaging and storage rooms.

Cooling tunnel

The use of dry air during the cooling of chocolate and confectionery, for example, reduces the cooling time. It also prevents condensation forming on products or machines. Even the packaging process can be improved with dry air, as the products do not stick to machines or packaging.

Sugar

Sugar crystals decompose or dissolve very quickly in a humid environment. Storage silos in which large quantities of loose sugar are stored are exposed to dry air to prevent incrustation and other moisture-related damage.

Confectionery

Controlled humidity is essential when coating confectionery with a sugar layer. Drying air with a high moisture content causes stickiness and poor adhesion of the sugar coating. The use of dry air during the cooling process for chocolate and caramel reduces the cooling time and prevents condensation forming on products or machines. Packaging processes are also improved, as dry air prevents products from sticking to machines and packaging materials.

Dehumidification: Cold storage

Ice, frost and fog formation always occur when warm air comes into contact with a cold environment, i.e. when the doors are opened.

Rime and ice on chilled food in the supermarket or cold store have a negative impact on presentation, productivity, quality and safety.

The K.I.R.S.C.H. dehumidification technology(dehumidifiers & adsorption dryers) eliminates icing of freezers, chest freezers and walls and floors in cold stores. The cold chain is ensured, defrosting is significantly reduced, smoothness on the loading ramp is avoided and product quality is guaranteed.
